Since taking over Le Pérolles, we have moved forward with one clear ambition: to evolve this house while remaining faithful to what has shaped its identity for more than 30 years.
The past few months have been intense, inspiring and deeply rewarding. Thanks to your trust, a wonderful energy has settled into Le Pérolles, both in the kitchen and in the dining room.

Our New Menu
Today, we are unveiling Victor’s third menu since joining Le Pérolles.
Week after week, his cuisine continues to gain in personality and precision. Seasonal ingredients remain at the heart of every plate, approached with respect, balance and generosity.
A cuisine that we like to keep simple in spirit, yet demanding in every detail.
Welcoming Josselin Jacquet
We are also very pleased to announce the arrival of Josselin Jacquet as our new Pastry Chef.
After several experiences in outstanding establishments, Josselin joins Le Pérolles to strengthen our pastry team and fully contribute to this new momentum.
His universe — precise, elegant and indulgent — will further enrich the experience we wish to offer at Le Pérolles.
Exceptional Opening on Sunday, June 21
On Sunday, June 21, Le Pérolles and Le Petit Pérolles will exceptionally be open during the day.
At the gastronomic restaurant, Victor will serve his “Moments” menu for lunch.
At Le Petit Pérolles, we will also host a brunch imagined by Victor and our new Pastry Chef Josselin Jacquet, offered in two seatings: 10:30am and 1:00pm.
